Crumb Cake Recipe
Crumb cake is actually a German dish and is called Streuselkuchen in Germany. It is made of yeast dough covered with a sweet crumb topping referred to as streusel. Sugar, butter and flour are the main ingredients that are mixed at a 1:1:2 ratios. The people in Germany usually make the delicious cake on a baking tray and divide it into oblong pieces. German Streuselkuchen should be very flat, about 1 inch, so that the crumbs make about half of its height.
But the recipe actually originated from Silesia, a province that is in Western Poland. The cake is found almost everywhere now a days. Also, different types of fillings, such as fruits, crème, chocolate, poppy seeds, are used by people to make the cake.
The Traditional Recipe –
The things you need to have for the delicious crumb cake –
- Canola Oil (2 tablespoons, plus some more for pan)
- Granulated Sugar (half cup)
- All-purpose flour (four cups, some more for pan)
- Baking Powder (two and half teaspoons)
- Large Egg (One)
- Pure Vanilla Extract (two teaspoons)
- Milk (half cup)
- Salt (half teaspoon)
- Ground cinnamon (one and half teaspoons)
- Unsalted Butter (One cup or Two Sticks), the butter should be melted and cooled
- Confectioners’ sugar (for dusting)
- Light-brown sugar (One cup)
Let’s Bake –
1 – Place the rack in the center of oven and preheat at 325 degrees. Brush a 13 x 9 x 2-inch glass baking dish with canola oil lightly. Now, dust the dish with some flour and tap it to remove excess. Prepare the batter now. Firstly, take a medium bowl and sift the flour (1 and ½ cup), baking powder, salt and granulated sugar together. Set the bowl aside. Secondly, take a second bowl and whisk the egg, canola oil, vanilla essence and the milk together. Fold dry ingredients into the egg mixture using a rubber spatula.
2 – In a prepared baking dish, spread the batter evenly and set it aside. Combine the remaining two and half cups of flour, cinnamon and brown sugar in a medium bowl and pour the melted butter over flour mixture. Now, with the help of rubber spatula sift until large crumbs form. Sprinkle crumbs over batter.
3 – Put the pan inside the oven and bake. After every 10 minutes, rotate the pan. Continue to bake until a cake tester or your knife comes out clean. Wait for another ten minutes after it does come out clean.
4 – Transfer the baking dish to a wire rack and let it cool for at least half an hour. Dust the cake with confectioners’ sugar and cut the crumb cake into 3-inch squares using a bench scrapper or a sharp knife. Store the cake in an airtight container for a day.
Mix sugar, cinnamon and salt in a medium bowl and whisk to blend. Now, add warm melted butter and stir. Add flour and use a fork to toss until moist clumps form. Set aside.
